Shiitake has a slightly more definite taste and smell. Rich, distinct, full-bodied, slightly smoky taste, wonderful smell of the forest, meaty and firm texture. The taste of shiitake is most often described as "umami". Can be fried, used for sauces, stews and soups (perfect for the frame). Gourmet substitute for mushrooms.


Shiitake as a medicinal fungus. Shiitake is the only known species that contains the Lentina  polysaccharide with anticancer properties. In Japan, lentinan is approved as an anti-cancer drug.


Cooking tips. Fungi should not be eaten raw as their cell walls are difficult to digest. Heat treatment releases the fungus' nutrient - softens tissues and allows our digestive enzymes to access those nutrients. It is recommended to cook mushrooms on medium heat for 10-15 minutes.
